Berry Compote

This goes great with lemon olive oil cake and is perfect in pop tarts.

Ingredients

500g Berries

48g Sugar

80g Lemon Juice

12g Corn Starch

12g Cold Water

Instructions

  1. Bring berries to a simmer with lemon juice and sugar. Cook 10 mins.
  2. Dissolve corn starch with water, add to berries and simmer for 2-3 mins until it thickens.
