We are big fans of slow, cold fermentation. 48h for our baguette, pretzel and bagel dough to greatly reduce the gluten and sugars – making our products better for your gut and you – and the taste buds – wowie! We cold ferment our sweet things like biscotti and cookies for 24h giving them that unmistakable Chris Bakes flavor!
