Ingredients
280g Flour
5g Salt
50g Sugar
224g Cold Butter Cubed
285g Starter
Jam or Berry Compote
Instructions
- In a bowl, mix flour, salt, and sugar.
- Use a food processor to cut the butter into the flour mixture. Just pulse a few times – do not overdo it.
- Pour the butter flour mixture back into the bowl, add in the starter and mix until just combined. It’s easiest with your hands – it’ll take a little elbow grease and patience.
- Wrap in plastic and chill in fridge for at least 1 hour or up to 3 days.
- Divide the dough into 2 and roll out one on a lightly floured surface to about 1/8 inch thick.
- Divide into 4 equal-sized long rectangles.
- Fill one end of the rectangles with the jam or compote, leaving some room around the edges.
- Take the other end of the dough and fold it over the jam.
- Crimp the edges together using a fork.
- Place onto a parchment paper-lined baking sheet.
- Brush with egg was and bake at 350F for 30mins.
