I use a Kitchenaid bowl-lift stand mixer. It's very robust and mixes like a champ.
Everything is measured in grams. Don't even think about using cups and spoons and stuff. I like and use this scale.
A metal bench scraper is great for moving dough around on the table and pre-shaping dough.
You'll need one of these plastic scrapers to get dough out of containers and bowls.
Use a lame to score your shaped loaves so it breaks open where and how you want during baking.
It's better to use filtered water for bread baking. I like these from Brita.
Pour boiling water over a pan filled with these lava rocks to make steam in your oven.
You'll want to use a bread flour with higher protein content. This Kirkland organic flour is my favorite.
