These buns are soft and pillowy and are perfect for burgers – especially Oklahoma smash burgers and sloppy joes.
Ingredients
125g Cooked Potato (Sweet works great too!)
125g Water
300g Flour
9g Honey
60g Starter
6g Salt
20g Soft Butter
Instructions
- Cut and cook sweet potato in boiling water for 20 mins
- Mix, autolyse potato, water and flour for 20 mins
- Mix in rest with dough hook until it comes together
- 4h Bench rest
- Fridge overnight or better 3 days
- Shape buns, proof 4h
- Bake 375F 30 mins
