Prime Rib

This goes on a slab of Sourdough Yorkshire Pudding.

Ingredients

4 Lbs Bone-In Prime Rib
1/4 Cup Butter, Softened
1 Tbsp Pepper
1 Tsp Herbes de Provence
Salt

Instructions

  1. Bring prime rib to room temperature, 6 hours. Heat the oven to 500F
  2. Mix butter, pepper, and herbes de Provence. Spread mixture over entire roast. Season generously with salt.
  3. Roast for 20 minutes.
  4. Turn the oven off and let the roast cook in the oven for 2 hours.
