These buns are soft and pillowy and are perfect for burgers – especially Oklahoma smash burgers and sloppy joes.
Ingredients
125g Cooked Potato (Sweet works great too!)
125g Water
300g Flour
9g Honey
60g Starter
6g Salt
20g Soft Butter
Instructions
- Cut and cook potato in boiling water for 20 mins, let cool
- Mix all ingredients until it comes together – it can take a while 20-25 mins.
- 4h bench rest
- Fridge overnight or better 3 days
- Shape buns, proof 4h
- Spray with water, sprinkle with seeds, bake 375F until 200F internal temp – about 12 mins.
