Sourdough Pop Tarts

Pop tarts are disgusting. These are the opposite!

Ingredients

280g Flour
5g Salt
50g Sugar
224g Cold Butter Cubed
285g Starter


Jam or Berry Compote

Instructions

  1. In a bowl, mix flour, salt, and sugar.
  2. Use a food processor to cut the butter into the flour mixture. Just pulse a few times – do not overdo it.
  3. Pour the butter flour mixture back into the bowl, add in the starter and mix until just combined. It’s easiest with your hands – it’ll take a little elbow grease and patience.
  4. Wrap in plastic and chill in fridge for at least 1 hour or up to 3 days.
  5. Divide the dough into 2 and roll out one on a lightly floured surface to about 1/8 inch thick.
  6. Divide into 4 equal-sized long rectangles.
  7. Fill one end of the rectangles with the jam or compote, leaving some room around the edges.
  8. Take the other end of the dough and fold it over the jam.
  9. Crimp the edges together using a fork.
  10. Place onto a parchment paper-lined baking sheet.
  11. Brush with egg was and bake at 350F for 30mins.
