Tri-Veggie Terrine

Need something for the vegetarians? Try this – it’s so pretty – and yummy.

Ingredients

3 Cups Broccoli
2 Cups Carrots
4 Cups Cauliflower
3 Eggs
6 Tbsp Cream Cheese
3 Tsp Lemon Juice
Salt and Black Pepper

Instructions

  1. Preheat oven to 375F. Line a loaf pan with parchment.
  2. Blanch the vegetables separately in boiling water 2 mins and shock immediately in ice water. Dry vegetables.
  3. Puree each vegetable separately with 1 egg yolk, 2 tbsp cream cheese and 1 tsp lemon juice, salt and pepper. Clean your processor in between vegetables.
  4. Whisk the egg whites until stiff, then fold 1/3 into each vegetable mixture.
  5. Spoon the broccoli mixture into pan, then the cauliflower and then the carrot. Or do it in a different order if you like.
  6. Bake for 40 mins. Bake longer until it’s not jiggly. Remove from oven and let cool in the pan.
