Have this with a baguette and some butter or a brioche grilled cheese – super easy, super simple.
Ingredients
4 Tbsp Olive Oil
5 Tbsp Butter, divided
1 Yellow Onion, Chopped
3 Garlic Cloves, Minced
1/4 Cup Flour
6 Cups Chicken Broth
2 (28-ounce) Cans Tomatoes
2 Tbsp Sugar
1/2 Tsp Thyme
Salt and Pepper
Instructions
- Heat the olive oil and 2 tablespoons of the butter over medium-low heat. Cook the onions until soft and translucent. Add garlic and cook for a few minutes more. Add the flour and continue cooking for 2 minutes more.
- Add the chicken broth, tomatoes, sugar, thyme, salt and pepper. Bring to a simmer. Reduce the heat and simmer covered for about 40 minutes.
- You can use an immersion blender to puree the soup if you like.
