Strawberry-Olive Dressing

Well ok then. Serve with fish.

Ingredients

2 Cups Strawberries
1/4 Cup Chopped Castelvetrano Olives
1/4 Cup Chopped Kalamata Olives
1/2 Cup Halved Cherry Tomatoes
1/4 Cup Olive Oil
1/4 Cup Fresh Lime Juice
1 1/2 Tsp Honey
2 1/2 Tsp Salt

Instructions

  1. Place 1 1/2 cups of the strawberries and the olives on a parchment lined baking sheet. Bake at 200F for 2 hours.
  2. Set the dehydrated strawberries aside for garnish. Place the olives and tomatoes in a bowl.
  3. Grate the remaining 1/2 cup strawberries and add to the olives and tomatoes along with the oil, lime juice, honey, and kosher salt, and stir.
  4. Season one side of the fluke with kosher salt. Arrange the fish, seasoned side down, on a serving plate. Spoon the dressing over the fish and sprinkle with flaky salt. Sprinkle the dehydrated strawberries over and serve.
