Ingredients
2 Cups Strawberries
1/4 Cup Chopped Castelvetrano Olives
1/4 Cup Chopped Kalamata Olives
1/2 Cup Halved Cherry Tomatoes
1/4 Cup Olive Oil
1/4 Cup Fresh Lime Juice
1 1/2 Tsp Honey
2 1/2 Tsp Salt
Instructions
- Place 1 1/2 cups of the strawberries and the olives on a parchment lined baking sheet. Bake at 200F for 2 hours.
- Set the dehydrated strawberries aside for garnish. Place the olives and tomatoes in a bowl.
- Grate the remaining 1/2 cup strawberries and add to the olives and tomatoes along with the oil, lime juice, honey, and kosher salt, and stir.
- Season one side of the fluke with kosher salt. Arrange the fish, seasoned side down, on a serving plate. Spoon the dressing over the fish and sprinkle with flaky salt. Sprinkle the dehydrated strawberries over and serve.
