Sourdough Yorkshire Pudding

You’ll make this when you make prime rib.

Ingredients

1/4 Cup Prime Rib Drippings
250g Warm milk
3 Egg, room temp
4g Salt
120g Starter, room temp
120g Flour

Instructions

  1. Place cast iron skillet in the oven and heat to 400F.
  2. Measure 2 Tbsp of roast drippings and add to a Cuisinart, along with flour, milk, eggs, and the salt. Process until smooth.
  3. Remove hot skillet from oven. Add 2 Tbsp drippings to the skillet and swirl to coat. Pour in the batter, return to oven and bake until it is puffed and golden brown, about 30 minutes.
