When you’re baking sourdough breads like Baguettes, you want to develop gluten so the dough can capture the gases when rising. Stretch and folds help with this and is super easy to do.

Instructions
- After mixing the dough, wait 30 minutes
- Pull up and fold over the dough for each side of the container
- Repeat at least twice every 1/2 hour up to 6 times. Twice is usually enough.
