Ingredients
180g Cream
67g Sugar
227g Starter
1 Egg
42g Melted butter
350g Flour
5g Salt
Instructions
- Heat the cream until warm but not hot. Add sugar, whisking until dissolved, then cool.
- To the cream mixture, add the starter, egg, melted butter, flour, and salt. Mix with dough hook until the dough is smooth.
- Let rise for 6-8 hours on counter, then fridge for 24-72h
- Divide and shape into small balls, place on oiled parchment lined baking sheet
- Cover and rest for 2h
- Cook in oil at 375F, don’t overcrowd.
