Sourdough Beignets

A deep-fried French pastry that you’ll want to serve right away.

Ingredients

180g Cream
67g Sugar
227g Starter
1 Egg
42g Melted butter
350g Flour
5g Salt

Instructions

  1. Heat the cream until warm but not hot. Add sugar, whisking until dissolved, then cool.
  2. To the cream mixture, add the starter, egg, melted butter, flour, and salt. Mix with dough hook until the dough is smooth.
  3. Let rise for 6-8 hours on counter, then fridge for 24-72h
  4. Divide and shape into small balls, place on oiled parchment lined baking sheet
  5. Cover and rest for 2h
  6. Cook in oil at 375F, don’t overcrowd.
