Sourdough Bao

These steamed buns are great with braised pork!

Ingredients

140g Water
300g Flour
100g Starter
30g Cornstarch
25g Sugar
6g Salt
5g Baking Powder
30g Oil

Instructions

  1. Mix all ingredients, rest 4h on counter
  2. Fridge for 24-72h
  3. Portion 100g, Form balls, roll to 4mm thick, brush with oil, fold over
  4. Rest until puffy, 2-3h
