Shrimp Noodle Salad

One of my favorite comfort foods – made with sourdough farfalle egg noodles.

Ingredients

1 Lb Shrimp

1 Red Bell Pepper, Chopped
1 Lb Sourdough Farfalle

1 Cup Mayo
1/2 Cup Creme Fraiche

1/4 Cup Chopped Fresh Chives
Zest and Juice From 1 Lemon

Salt and Black Pepper

Instructions

  1. Blanche the shrimp in boiling water – just a minute or so, then they go into an ice water bath so they don’t overcook.
  2. Cook sourdough farfalle in boiling water, 2-3 mins, let cool
  3. Combine all ingredients – fridge overnight
