Potato Leek Soup

Have this with a baguette and some butter . Super easy, super yummy.

Ingredients

3 Tbsp Olive Oil
3 Tbsp Butter
3 Potatoes, Peeled and Chopped
3 leeks, Thinly Sliced
3 Garlic Cloves, Finely Chopped
6 Cups Chicken Broth
6 Sprigs Thyme
Salt and Pepper

1 Cup Heavy Cream

Instructions

  1. Heat the oil and butter over medium heat. Add potatoes and leeks. Cook about 7 minutes. Add garlic and cook about 30 seconds.
  2. Stir in chicken broth, thyme, salt and pepper. Bring to a simmer over medium-high heat. Reduce the heat to medium-low and cook, uncovered, until the potatoes are tender, 15 to 20 minutes.
  3. Remove the thyme. Use an immersion blender to Puree until smooth.
  4. Stir in the cream and simmer another 15 minutes.
