Have this with a baguette and some butter . Super easy, super yummy.
Ingredients
3 Tbsp Olive Oil
3 Tbsp Butter
3 Potatoes, Peeled and Chopped
3 leeks, Thinly Sliced
3 Garlic Cloves, Finely Chopped
6 Cups Chicken Broth
6 Sprigs Thyme
Salt and Pepper
1 Cup Heavy Cream
Instructions
- Heat the oil and butter over medium heat. Add potatoes and leeks. Cook about 7 minutes. Add garlic and cook about 30 seconds.
- Stir in chicken broth, thyme, salt and pepper. Bring to a simmer over medium-high heat. Reduce the heat to medium-low and cook, uncovered, until the potatoes are tender, 15 to 20 minutes.
- Remove the thyme. Use an immersion blender to Puree until smooth.
- Stir in the cream and simmer another 15 minutes.
