Peach-Apricot Puree

Something fancy!

Ingredients

4 Tsp Vegetable Oil
¾ Tsp yellow Mustard Seeds
1-inch piece Ginger, Grated
1/2 Thai Chile (with seeds)
7 Dried Apricots, Chopped

1 Peach, Peeled and Diced
4 Tsp White Wine Vinegar
3 Tbsp Grapefruit Juice

1 1/2 Tsp Salt
2 Tbsp + 2 tsp Lime Juice
3/4 Tsp Honey

Instructions

  1. Cook mustard seeds in oil over medium heat for 2 minutes.
  2. Add the ginger, chile, peaches, apricots, grapefruit juice, vinegar, and salt. Bring to a simmer over low heat, cover, and cook until the peaches are tender, 10 to 12 minutes.
  3. Transfer to a cuisinart and add lime juice and honey. Puree until smooth.
