Lemon Cream Chicken

This is awesome with sourdough egg noodles.

Ingredients

4 Chicken Breasts or Thighs
1 Tbsp Olive Oil

2 Tbsp Butter
1/2 Cup Diced Onion

1 Tbsp Minced Garlic

2 Cups Chicken Stock
2 Tbsp Lemon Juice
1/2 Tsp Red Pepper Flakes
1/4 Cup Heavy Cream

Salt and Pepper

Instructions

  1. Heat the olive oil in a pan on medium-high heat. Brown the chicken on both sides for 3 minutes per side. Transfer to baking sheet lined with foil, cook at 375F in oven for 8 minutes.
  2. Add olive oil to pan and cook onion until translucent. Add garlic and cook for 1 more minute.
  3. Add chicken stock, lemon juice and red pepper flakes, cook down to about 1/2 – 10-15 mins.
  4. Add chicken, cook for another 10 minutes.
  5. Lower heat, add cream, salt and pepper.
