Bacon Jam

Oh boy! Great on an egg baguette.

Ingredients

1 Package Bacon, Cut Into Small Pieces
5 Sweet Onions, Diced

A Few Large Pinches of Salt
1/4 Cup Jam or Maple Syrup

Instructions

  1. Cook bacon until foamy and crispy, remove from pan, leave grease.
  2. Add onion to pan, sprinkle with salt and cook until caramelized – 30-40mins. Stir often, scrape browned bits from bottom of pan when they appear.
  3. Add bacon back in and add jam or syrup – simmer for 5 minutes.
