I got my hands on a brand new, decades old Magic Mill!
Ingredients
450g Water
500g Wheat Berries
100g Starter
10g Salt
Instructions
- Grind wheat berries as fine as possible with your mill
- Autolyse water and flour for 20mins
- Add starter and salt, mix 5 mins
- Rest at room temp for 1.5 hours, stretch and folder every 30 mins
- Fridge for 24 – 72h
- Shape, place in towel lined Banneton, rest for 2h
- Score, bake in pre-heated Dutch oven at 500F for 20mins with lide, another 25min without lid
