100% Magic Mill Ground Whole Wheat Flour Sourdough Bread 🎥

I got my hands on a brand new, decades old Magic Mill!

Ingredients

450g Water
500g Wheat Berries
100g Starter
10g Salt

Instructions

  1. Grind wheat berries as fine as possible with your mill
  2. Autolyse water and flour for 20mins
  3. Add starter and salt, mix 5 mins
  4. Rest at room temp for 1.5 hours, stretch and folder every 30 mins
  5. Fridge for 24 – 72h
  6. Shape, place in towel lined Banneton, rest for 2h
  7. Score, bake in pre-heated Dutch oven at 500F for 20mins with lide, another 25min without lid
