Sourdough Aebleskiver

Ok Wendy – here we go!

Ingredients

Preferment

500g Milk

30g Apple Cider Vinegar

250g Starter

250g Flour
30g Sugar

Batter

2 Eggs
50g Melted Butter
6g Salt
5g Baking Soda

Instructions

  1. Mix all preferment ingredients, let rest at room temp overnight
  2. Mix egg, melted butter, and the preferment in a bowl.
  3. Add baking soda and salt and mix.
  4. Heat an æbleskive pan to medium heat. Butter each hole in the pan.
  5. Add batter to each hole and cook for about 1 minute.
  6. Using a toothpick, turn all the balls a quarter turn.
  7. Fill the inside shell with a bit more batter and turn the ball to turn the finished part upwards. Finish baking for about 2-3 more minutes.
