Sourdough Chocolate Olive Oil Cake

Ingredients

109g Olive Oil
120g Starter
236g Water

250g Flour

400g Sugar
6g Salt
6g Finely Ground Coffee

75g Cocoa Powder

10g Baking Soda

2 Eggs
12g Vanilla
244g Milk

Instructions

  1. Mix flour, olive oil, starter, and water. Cover and rest 24h.
  2. In a separate bowl, mix together dry ingredients.
  3. Add eggs, vanilla and milk to sourdough mixture and whisk to combine.
  4. Whisk in dry ingredients – do not overmix.
  5. Add to oiled cake pans.
  6. Bake at 350F for 30-35 minutes until internal temp reaches 200F
  7. Cool for about 20 minutes, then remove from pan.
