Nut Vinaigrette

Something fancy!

Ingredients

1/2 Cup Olive oil
1 1/2 Tsp Coriander Seeds, Crushed
1/2 Cup Pistachios, roughly Chopped
3 Tbsp Sunflower Seeds
1/2 Tsp Salt
4 dried apricots, cut into dice
2 Tbsp Orange Juice
1 Tbsp Lemon Juice

Instructions

  1. Toast coriander in oil until fragrant, about 2 minutes. Add the pistachios, sunflower seeds, and salt, and cook, stirring, until golden brown, about 2 minutes. Transfer to a cuisinart and pulse a few times. Transfer to a bowl and stir in the apricots, orange juice, and lemon juice.
